Garlic Has Chefs Going to the Scope Side

imageI was blissfully- and unexpectantly- walking around a garlic festival this past weekend during an outing upstate. As I was enjoying the history and looking at the array of garlic-based products and other homemade items, my children were walking around acting like Pepe La Pew was standing right next to them. Unfortunately, most people think 'garlic' has a malodorous scent and in theory it is true, but the essence of the seasoning and how it 'enlivens' a meal plays an important role in the dish.
